“Brussels sprouts are high in fiber, vitamin C and antioxidants,” Oldman says. “They’re incredibly nutrient dense and become even more flavorful as they cook.”

2. Olive oil

A small amount of olive oil helps the sprouts brown evenly while providing heart-healthy fats.

“Olive oil is rich in monounsaturated fats,” says Oldman. “It’s a great choice for roasting because it enhances flavor without weighing the dish down.”

3. Lemon juice

A splash of lemon brightens the entire dish and balances the richness of the roasted sprouts.

“Lemon adds acidity and vitamin C,” Oldman explains. “It’s an easy way to add freshness without extra salt.”

4. Thyme

Thyme adds warmth and depth, making the whole dish feel more aromatic.

“Herbs add complexity and help build layers of flavor,” Oldman notes. “They’re a simple way to elevate everyday vegetables.”

5. Garlic powder

It blends smoothly into the vinaigrette and gives the dish its savory backbone.

“Garlic provides big flavor with very few calories,” Oldman says. “Using the powder keeps the seasoning even throughout.”
